University of Illinois Extension to offer fall food preservation course in Macon County

August 22, 2023 – The University of Illinois Extension office will soon be bringing food preservation and storage courses to Macon County.

At the free workshop, offered from 6-7:30 p.m. on Wednesday, September 20 at the Extension’s Macon County office, attendees will learn how to properly freeze, dehydrate and ferment foods for home storage. Through the training, the Extension hopes to show locals food preservation isn’t as difficult as it may seem, and with the proper equipment and research-based education, anyone can enjoy garden-fresh foods throughout the year.

“Freezing, dehydration and fermentation are great methods for beginners to learn and can be a way for seasoned canners to expand the types of preserved foods they keep,” Extension Educator Caitlin Mellendorf said.
